Job Summary
A coffee shop in Westlands, Nairobi is looking for a chef. This individual will be responsible for all food production including, developing menus and recipes, food purchases, and the supervision of floor and kitchen staff. Maintaining the highest professional food preparation, quality and sanitation standards is a prerequisite.

Job Description/Responsibilities:
• Develop standard recipes and techniques for food preparation and presentation to assure consistently high quality, with minimal food costs
• Exercise portion control for all items served, and assist in establishing menu selling prices
• Ensure high standards of sanitation, cleanliness, and safety are maintained throughout all kitchen areas at all times
• Implement employee training to increase their knowledge about kitchen safety, sanitation, customer service, and accident prevention principles
• Ensures proper staffing for maximum productivity and high standards of quality control, to achieve maximum profitability
• Develop policies and procedures to enhance and measure customer service and food quality to reflect techniques, equipment and service standards
• Approve the requisition of products and other necessary food supplies, and product quality upon receipts
• Establish controls to minimize food and supply waste/theft, at the same time preventing product stockouts, based on timely and optimal ordering
• Coordinate the work of kitchen employees to assure that food preparation is timely, economical and technically correct and within budgeted cost goals
• Periodically visit the dining area when it is open to welcome and interact with guests
Other Skills:
• Ability to produce a high volume of work in a timely manner, which is accurate, complete, and of high quality
• Ability to follow directions, to take criticism, to get along with co-workers and supervisors
• Ability to prepare coffee shop operating budget, analyze variances, initiate corrective actions
Job Requirements:
• Proven work experience of at least 7 years as a Chef in a reputable institution
• Must have experience in hot kitchen, with experience as a pastry chef being an advantage
• Advanced knowledge of culinary and (preferably) baking and pastry techniques
• Excellent leadership and time management skills
• Up-to-date knowledge of cooking techniques and recipes
• Degree in the related field or a culinary school diploma preferred
